When asked what kind of raw dessert was on the menu in my restaurant, the mousses were by far the first items suggested . First because it's so easy and so fast to make , it's almost a joke ! And the result is always mind blowing ! When it comes to desserts , I suck ! Big time ! I had to hire a vegan pastry chef because I dont have the patience to even try improving myself ... But with this recipe I never sucked !
CHOOBEEDOORAW CHOCOLATE MOUSSE
1/4 cup pitted medjool dates, soaked
1/4 cup pure maple sugar or agave nectar ( I use a lil less)
1/2 teaspoon vanilla extract
1 1/2 mashed avocados
3 tablespoons unsweetened (raw) cocoa
3 tablespoons water
Place the dates, maple syrup, and vanilla in a Blender (Vita Mix is my favorite !) and process until smooth. Add the avocados and cocoa powder and process until creamy. Stop occasionally to scrape down the sides of the bowl with spatula. Add the water and process briefly. Serve chilled or at room temperature. Store in the fridge in a sealed container, will keep for 3 days.
You can substitue the cocoa with fresh berries !
Avocado-Banana mashed together is surprisingly yummy in the morning !
